Echo Activity icon updates

With the release of Echo's new Activity player,  we are updating some icons to better reflect the activities they represent, and to avoid overlap with App-level buttons (for example, the previous Assessment activity icon closely resembled our Help button).

The new activity icons, pictured below next to the old icons they are  replacing, will be active this Thursday (7/25).
